White Chocolate Butterscotch Cookies

Happy Friday, everyone!

Today's post is going up a little later than normal. Mr. Humble took today day off and is at home… which throws a wrench into my normal baking/blogging routine.

Like when he drags me off to hunt down produce all morning because being at home on a workday makes him "fidgety".

He does try to be helpful though, like staging this glass of milk for me.

You spilled some there, buddy…

So I'm wrapping up my week of cookies with these white chocolate butterscotch flavored treats. They're light, crisp, combining the butterscotch flavor of brown sugar with the sweet smoothness of white chocolate.

White Chocolate Butterscotch Cookies
adapted from Martha Stewart's Baking Handbook
yields 2-3 dozen cookies

1 3/4 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cup golden brown sugar
3/4 cup vegetable shortening, room temperature*
1 teaspoon molasses
2 tablespoons unsalted butter, room temperature
1 large egg
1 tablespoon vanilla
8 ounces white chocolate, the real stuff, roughly chopped

* UK readers: Shortening is equivalent to Trex, White Flora and other brands of white vegetable fat.
Preheat your oven to 350°F and place a baking sheet in the bottom third of your oven.

Line your baking sheets with either parchment or silicone baking mats.

In a medium bowl, whisk together the flour, baking soda and salt. Set aside.

Using either a stand mixer with the paddle attachment, or hand beaters, cream the butter, shortening, molasses and sugar together on medium high speed. Beat for 3-4 minutes until the mixture is very light and fluffy. Add the egg and vanilla and beat in on low speed. Then add the flour in two parts, mixing each until combined.

Stir in the chopped white chocolate and roll the dough into 3cm balls or drop heaping tablespoons of dough onto the prepared baking sheet. Leaving 5cm of space between the cookies.

Bake the cookies for 15 minutes.

Remove from the baking sheet and allow them to cool on a wire wrack. The cookies will be soft and chewy warm from the oven, but will be crisp when fully cool.

Though you always ask when I absolutely insist you eat some baked treat with that crazy look in my eyes, I have yet to poison any of them.


  1. Molasses is not something I usually keep on hand; can I use honey instead?

    Oh, and happy anniversary! That's a beautiful photo! Where in the world was it taken?

  2. You can omit the molasses if you substitute dark brown sugar for the golden brown sugar. Or use golden syrup/dark treacle in place of the molasses.

    If you have none of those things, just omit it all together. The cookies will be fine, just a touch less butterscotch-y.

  7. Bookmarked! I just bought a huge chunk of Callebaut white chocolate on clearance at Meijer (WTF, right?) and I didn't know what to do with it. This sounds like a wonderful idea!

  11. I look forward to baking these! I was wondering, though, about the baking sheet that goes into the oven while it's preheating. Is this the "prepared" baking sheet, on which the first batch bakes? Or does it stay in the oven to deflect heat?
